Chunky chocolate treats packed with crunchy biscuit pieces, marshmallows and cherries for a decadent anytime treat.

Ingredients

For the cookies

200g butter/baking margarine, softened

30ml milk

500g Snowflake Creations Chocolate Brownie Mix

125ml desiccated coconut

For the rocky road

250g chocolate coconut cookies

80g butter

40ml golden syrup

1  fondant icing mix sachet

1  baking chocolate sachet

320g milk chocolate, roughly broken

75g mini marshmallows

40g glacé cherries, chopped

Method

  • First bake the cookies...
  • Preheat oven to 180°C
  • Line a baking tray with greaseproof paper
  • Mix softened butter with milk, then add brownie mix and desiccated coconut and combine fully
  • Shape into golf-ball sized balls by hand, then flatten on a baking tray with a fork
  • Bake for about 8–10 minutes and cool completely
  • ... then make the rocky road
  • Break chocolate coconut cookies into pieces
  • Melt butter and golden syrup in a pan, then add fondant icing mix and stir well
  • Add all chocolate and melt on low heat
  • Add broken cookie pieces, marshmallows, and glacé cherries to the melted mixture
  • Press into a 20 x 20 cm lined and greased baking tin
  • Refrigerate until set, then cut into squares (avoid keeping it in the fridge for too long)
